You are correct, you can't use in on someone else's pet. So you make a lvl 1 character on their realm, and then lend them a pet, they upgrade the pet and then transfer it back.
the value depends on which stone, undead being the least desired, but I've seen the approx value be 2-3k.

I flipped through alot of the 'back pages' of this forum, and little do I see how things work.
Could someone kinda help me (and probably others) figure out how this trading works, please?
As far as I know, the BoP stones can't be used on other people's pets.
So this leads me to believe the only way to use someone else's stone is to cage the pet, trade it over, have the other person use the stone, cage it up again, and trade it back...
(Also curious on how much a transfer above would be worth, in gold)
Or does talk of stones refer to the BoE ones that sell for like 15k?

Any time someone mentions a pet family in reference to a stone, it's exactly what you described. You're basically just paying someone to upgrade an uncommon cageable pet for you.
Since most of us are trading cross-realm, the value in gold is kind of hard to gauge. Typically, you're swapping stones or trading a pet for the stone. The few that I've bought on my own server were in the 1-2K range.

I mean, if I have only the one character or play on the one realm, there's no way I can transfer funds, right?
I'd have to find someone of my own faction, on my server to be able to pay for the upgrade.

That's correct. Unless you're willing to pay real money for a character transfer (and again to transfer back potentially), you can't easily move gold.
However, I've found it pretty easy to buy an extra pet from my regular server, and then on a different server create a lvl 1 and sell it on the AH. More time consuming, and important to check out the market there to see the expected value first, but not too much trouble.
