I was just parusing the AH on Stormrage US and there are multiple Darkmoon Rabbits up for sale. Why is the icon for some of them purple and some of them showing as blue?

The item that teaches the rabbit is purple (epic). Once learned and caged, the rabbit is blue or rare (no epic pets currently exist for people to obtain in their collection). So Blizz determined the item is epic.
Some collectors prefer one that has been caged so they can see the breed. An unlearned one (purple) is an unknown breed.

To add to Gwenolyn's answer, the blue and purple versions are essentially the same, just one is caged and one is not. One shows the breed while the other is a mystery until added to the Pet Journal.

Considering that rabbits favors speed, its a bit of a gamble to learn the unlearned version, as it only has 1/3 chance of being S/S

It's exactly the same thing with the Hyacinth Macaw.. Drop is purple, pet is blue..
