where do I look to find out which breed is the best for each pet?

Many a thread here discusses that.
But breeds really matters on a few things.
Are you going to pvp? If not breed doesn't matter
What moves are you using from a pet? If it is one that hits more than once if goes first, stuns if first, a dodge or a blind then you want the fastest breed one can get of the type.
While on the flip side of that some moves benefit from being slower like dragon tail or undead pets.
What breeds the pet comes in. Some pets do not have much if any option on the breed others have multiple.
Lastly personal preference some swear by speed, others by power and still others like health.
Speed is very nice but most speed pets hit like wet noodles.
Power is nice and can lead to some awesome crits. Also, a lot if heals get extra heals based off of power.
Health makes for some nice tanky pets and aoe heals are based off of health so extra heals for health pets.

Basically it comes down to how you plan to use your pet. Then try to find the best breed that meets this.
Sometimes one doesn't have a choice though.

As Digem said it is all subjective and dependent on how you want to use the pet so by definition you can't have an definitive list of "best" breeds. With that said there are some pets there is a general consensuses.

For example the Death Adder Hatchling. If you use it for anything, but pvp especially, the only breed you really want is the S/S because going faster makes blinding poison last two rounds and that is what makes the pet powerful.

Similar for rabbits. Being faster means dodge is two rounds and it makes it easier to avoid big attacks. It also makes you hit an extra time with flurry so you clearly want to be faster. For specific PvE fights a p/s or other breed of rabbit might be fast enough and technically better than a s/s breed that wastes a bunch of extra points on being a lot faster than the opponent. Some people might even prefer a P/S rabbit over a s/s rabbit if they have some other really fast pet to take care of anything that would be faster than the p/s rabbit in a pvp fight.

Completely dependent on what you want to use each pet for. If it's a pet I probably won't use in pve or pvp battles then I don't care. If I ever decide to use it for pve or pvp battles then I'll just go back (or buy, whatever the case may be) and hunt for the breed I want.
