u have a new cursor (crosshair) for when you mouse-over the wild pets and you can only interact with them within a melee(ish) range so I assume that gets you into battle with them and i believe in the battle you will throw a net to catch them (see picture below).

As you can see the net icon seems to be disabled, this is probably due to the fact he is facing another person in battle and you will only be able to catch wild pets.

I read this the other day under the pet battle system area on the wow site.
"What's more, you will also have a brand-new way to add more pets to your collection. In addition to purchasing pets or getting them as item drops, you can now also encounter and capture vanity pets in the wild. If you run into one of these rare pets, you can have your own pet challenge it; if you manage to defeat the wild pet, you will capture it and add it to your collection!"
I assume that means you just have to beat them in the wild although if that's the case I do wonder what that net is for that for that Evilgnomey mentioned.

Collecting wild pets on the beta is still a feature that hasn't been fully implemented yet. Blizzard has mentioned that collecting a wild pet would require a pet battle between one of your existing companions and said wild pet. Which wild pets will be tamable and how exactly that combat will play out is still unknown atm. Hopefully they'll let us test it out soon!
