I know there's a list of pets based on their spawning conditions, but what about rarity in general? I don't mean poor, common etc, but by how hard it is to find the pet.
For example, the Minfernal (I'd rate this a 5/5 difficulty) vs the Sand Kitten which I'd rate a 3/5.
A way to sort pets based on rarity/difficulty to find would be great.

Interesting. I'd really like to see if there was such a list, and I'll happily contribute to one if somebody is creating it.
However, I know that the difficulty of finding many pets is somewhat based on what other people on your server are up to. If somebody is searching for a particular pet in a zone, you are less likely to find it after they've cleared them all out. If somebody is forcing a pet to spawn (by killing certain nearby critters/mobs) then you will see more of them. You'd have to pass over a zone on several different days to get a real idea of the rarity.

Wild pets come in poor, common, uncommon, and rare. I don't think there will be a "rare" list because no pets come only as rare, at least to my knowledge.

I agree with Xiie. Hard to find pets will vary depending on each server, so a concrete list would be somewhat difficult to create imo.
Personal opinion would also be a factor. Players can have different experiences with certain wild pets. One may not consider a "rare" pet all that difficult to find, while another would feel a different way. There's no exact way to quantify how hard it is to find a wild pet.

I would say these are the marquis ones currently, based on how badly they're camped:
Minfernal
Scourged Whelpling
Flayer Youngling
Sporeling Sprout
Fel Flame
Spawn of Onyxia
And if you include the time-dependent spawns, then also Restless Shadeling. The weather-dependent ones are very annoying to get, but that's more a matter of being in the right place at the right time and not as much due to competition.
As for genuinely rare, simply due to the very low number of spawns, then Snowshoe Hare is pretty difficult.
Or, if you want difficult to get due to pet battle mechanics, then Crimson Geode, because it likes to kill itself when it gets into trapping range.

On my servers the highly hunted pets include the Giraffe Calf, the Minfernal, the Onyxia Whelpling, the Tiny Twister, and the Jade Oozeling. With the exception of the Fel Flame, the majority of the Outland pets are readily available, and the only times I don't see them when flying past are those that I personally have cleared them out.
